Baked Lemon Chicken and Cheesy Cauli Rice

How have I never made cheesy cauliflower rice before? This was sooooo good its now my all time favorite way to make cauliflower rice! It tastes just as good if not better than cheesy chicken and rice. You have to try it.

To make the Chicken:
Chicken
Olive oil
Garlic
Salt
Pepper
Parsley
Oregano
Thyme
Rosemary
Lemon

Preheat oven to 400. Add chicken and coat with olive oil to a baking dish. Season both sides with salt, pepper, parsley, oregano. Add garlic to the dish lightly smashed. Top with slices of lemon and sprigs of rosemary and thyme. Bake for roughly 30 minutes until chicken is cooked through

When the chicken is almost done cooking make the Rice. I love using frozen veggies because I don’t have to worry about them going bad and they’re great in a pinch.
1 and 1/2 cups frozen cauliflower and broccoli
1 and 1/2 cups frozen cauliflower rice
Salt
Pepper
1/4 tsp Garlic powder
1/2 tsp butter
1/4 cup df mozzarella (Brie is another good option)

Spray a pan with avocado oil on medium heat. Once the pan is hot add your frozen veggies, salt, pepper, and garlic powder. Stir regularly until veggies are cooked through. Add in your butter and cheese and stir until the cheese has melted in with the veggies. Serve immediately.
