Copycat Sicilian Salad
Ordered this salad from our favorite pizzeria the other week and I became obsessed! Had to see if I could recreate it and it was my staple meal prep for all of last week so sharing the recipe with you!
1 cup Romaine lettuce
1/4 cup sliced celery
1/4 cup chopped cherry tomatoes
1/4 cup fire roasted red bell peppers
1/4 cup sliced red onion
feta or Parmesan cheese
coconut sugar candied walnuts
1/2 cup Seasoned ground turkey or chickpeas
Balsamic dressing
1/2 cup extra Virgin olive oil
1/4 cup full-fat coconut milk
1/4 cup balsamic vinegar
1 tsp dijon mustard
1/2 tsp garlic powder
1/2 tsp sea salt
1/4 tsp black pepper
Throw in a nutria bullet of blender until creamy!
