Spiced Lemon Chicken with Green Beans and Whipped Feta
INGREDIENTS:
Chicken Marinade
3 tbsp olive oil
1 tbsp smoked paprika
1 tsp cumin
1/4 tsp cayenne pepper
1/4 tsp cinnamon
4 cloves finely chopped garlic
1 inch fresh ginger
dash red pepper flakes
2 lbs chicken breast
juice of 1 lemon
2 tbsp red wine vinegar
2 tbsp honey
2 tbsp sun dried tomatoes chopped
Whipped Feta
1 cup feta
1/4 cup greek yogurt
Splash olive oil
Pepper
Squeeze of lemon
Basil chopped
Preheat oven to 400 F. Add all marinade ingredients to a bowl and mix together. Let the chicken marinate for 15 minutes then add to pan lined with parchment paper and bake for 20 minutes.
While chicken is cooking blend the whipped feta together. In a pan on medium heat add thinly sliced shallot and green beans with a little avocado oil. Season with salt, pepper, and garlic.
To plate: spread whipped feta, top with green beans and then chicken and drizzle a little of the marinade on top!
