Lemon Dutch Oven Chicken 

INGREDIENTS:

  • 1 whole chicken (if you freeze it take it out about 2 days before to slowly defrost in the fridge)

  • 2.5 lemons

  • 3 carrots peeled and chopped

  • 4 golden potatoes large chopped

  • 1 onion cut into 8 sections

  • Olive oil

  • 1 Tbsp butter

  • 8 cloves of garlic

  • Salt and pepper

  • Oregano

Preheat oven to 350

Add in your potatoes, carrots, and onions to your Dutch oven and drizzle with olive oil, sprinkle with salt, pepper, and oregano and give it a mix.

Pat your chicken try, quarter one lemon and stuff it inside the chicken with all of your garlic. Take your butter and gently massage it in just underneath the skin on the chicken breast’s to help them stay moist. Season generously with salt and pepper and then pop in the Dutch oven. Sprinkle with oregano and top with the remaining 1.5 lemon slices.

Bake for an hour and a half then remove from oven and let it rest with the lid on for 10 minutes.

Plate and serve!!!
