HIDDEN VEGGIE TOMATO SOUP

INGREDIENTS:

  • 2 containers of campari tomatoes

  • 1 cup butternut squash cubed

  • 1 cup sweet baby bell peppers chopped

  • 2 large carrots peeled and chopped

  • 5 cloves of garlic

  • 1/4 sweet onion roughly chopped

  • olive oil

  • salt and pepper to taste

  • dried basil

  • 1/4 cup coconut milk

Preheat oven to 400F. In a baking dish add your veggies. Season with generous olive oil, salt, pepper, and dried basil. Roast for about 40 minutes until carrots are soft. Add contents to a blender with 1/4 cup of coconut milk. Leave the vent on the lid off and cover with a cloth or paper towel and blend until smooth.
