Buffalo Chicken Meatballs
These were by far the best meatballs I’ve ever had. The secret ingredient? The grated carrot helps keep in the moisture plus a little extra veggie in your meal!
1/2 a large carrot grated about 1/4-1/3 cup
1/3 white onion finely minced
3 garlic cloves finely minced
1 egg lightly beaten
1 tbsp Dijon mustard
1 lb ground chicken
1 cup bread crumbs (I used gluten free)
1 tsp salt
1/2 tsp ground pepper
Add all ingredients to a bowl and mix well until thoroughly combined.
Spray an air fryer with avocado oil and using a scooper portion out your meatballs, roll into balls and place in air fryer. Cook at 390 for 6 minutes, flip, and cook again at 390 for about 7 more minutes. Should equal out to about 14 meatballs.
Toss in Frank’s Buffalo sauce and serve with rice, noodles and goat cheese, or in a yummy salad like this! I did mine with shaved carrot, lettuce, spinach, tomato, cucumber, and goat cheese.
