1 cup sweetened coconut flakes and 2/3 cup powdered monkfruit blitz in a blender.
Add in:
2 tbsp vegan cream cheese
1/4 cup sweetened condensed coconut milk
2 tbsp gluten free flour
1 tbsp coconut flour
1/2 tsp vanilla
1 egg white
Pinch of salt
Blend until combined. The dough won’t be thick

Put about 1 cup of coconut flakes on a plate or shallow bowl and with a cookie scooper drop cookie dough into coconut flakes and roll to coat. Place on baking tray lined with foil (to prevent sticking butter foil the sprinkle some gf flour top of butter) and push your thumb in the middle to form the nest.
Bake at 325 for 30 min (I covered mine half way through to prevent browning too much).

Once done let cool. Melt 1/2 cup df chocolate with 1/2 tsp coconut oil. Dip bottom of cookies in chocolate and sit upside down to cool in fridge. Once the chocolate is cooled top with your candy eggs!
