Protein Pumpkin Bagels

What you’ll need:

  • 2 1/2 cups gluten free flour

  • 3tsp baking soda

  • 1/2 tsp salt

  • 2 tsp pumpkin pie spice

  • 1 tsp cinnamon

  • 1/2 cup pumpkin purée

  • 1 1/2 cups greek yogurt

Preheat oven to 350° F.

Combine flour with baking soda, salt, pumpkin pie spice, and cinnamon in a medium sized bow. Then add in pumpkin purée and greek yogurt. Knead into dough and add a little flour at a time if need be to get desired consistency. Spray hands with a little avocado oil to roll dough into balls and then using your index finger in the middle swirl into bagels. Lay them on a parchment lined baking pan. Scramble an egg to add an egg wash on top for that nice color and coating. Bake for 22 minutes.

Serve toasted with a little pumpkin butter!
