Pumpkin Banana Bread
What you’ll need:
2 cups flour
2 teaspoons pumpkin pie spice
1/2 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup coconut oil
1/2 cup coconut sugar
2 large eggs
2 teaspoons vanilla extract
2 medium bananas mashed
1 cup canned pumpkin puree (not pumpkin pie filling)
1/2 cup chocolate chips
1/4 cup chopped pecans
1/2 cup powdered sugar / 0 cal powdered sweetener
2 tsp milk
1 tsp pumpkin pie spice
Recipe:
Preheat the oven to 350°F. Lightly spray a bread pan with avocado oil.
In a large bowl mash your banana then whisk in sugar and coconut oil until creamy. Add in eggs, vanilla extract, pumpkin puree, pumpkin pie spice and cinnamon.
Mix in baking soda, baking powder & salt.
Slowly add in the flour with a rubber spatula.
Fold in the chopped nuts and chocolate chips.
Pour the batter into the prepared pan and bake for 50-60 minutes or until an inserted toothpick comes out clean and the top feels firm to the touch. The loaf shouldn't wobble if you nudge the pan.
Once cooled use powdered sugar or swerve powdered sweetener and pumpkin pie spice and slowly stir in milk to create frosting and drizzle on top.
