Lemon Tahini Energy Bites

LEMON TAHINI COCONUT BITES 🍋🥥

It’s summer and my Florida soul is craving those fresh flavors of the tropics! These are not only fresh but naturally sweet and full of fiber and healthy fats.

What you’ll need:

  • 1 and 1/4 cup of cashews

  • 8 pitted dates

  • 1 meyer lemon

  • 1 large tbsp tahini

  • 1/4 cup coconut flakes

  • 1 tbsp flax meal

  • 1 tbsp chia seeds

Recipe:
Pulse cashews in a food processor then add in 8 pitted dates until well mixed.

Add in the juice and zest of one Meyer lemon, a heaping tbsp of tahini, the coconut flakes, flax meal and chia seeds.

Blend it up until it turns into a dough.

Then roll the dough into bites and roll them in coconut.
