Protein Pumpkin Peanut Butter Cups
A delicious treat not only lower in sugar but also packed with some sneaky greens as well!
1/2 cup dark chocolate
1 tsp coconut oil melted
1 scoop vanilla protein
1 scoop greens powder
1/4 cup pumpkin purée
1/4 cup peanut butter
Optional: festive sprinkles
Melt chocolate with coconut oil by microwaving 30 second increments at a time. Put half the melted chocolate in about 6 muffin baking cups and save the rest for topping. Place muffin cups in the fridge to cool and harden while mixing the filling.
Mix protein, greens powder, pumpkin, and peanut butter together and scoop onto the cooled and hardened chocolate lined baking cups. Even out the layers and top with the remaining chocolate. (You can add sprinkles here if you want). Leave in the fridge to cool until they’re hardened.
