Fall Harvest Pasta Salad
What you’ll need:
1 sweet Italian chicken sausage
1 cup cubes butternut squash
1 cup brussel sprouts halved
1/2 cup shredded kale
1/3 cup cooked pasta
1/2 cup chopped beets
2 tsp apple cider vinegar
Flax oil
1 tsp honey
2 tbsp tahini
Recipe:
Sautée your brussel sprouts, sausage, and squash in a pan lightly sprayed with avocado oil. Season with salt, pepper, and garlic until the squash is cooked through then add in a huge handful of kale to wilt.
In a mixing bowl combine cooked veggies and sausage with your cooked pasta and raw beets.
To make the dressing, in a small bowl, add 2 cap full servings of apple cider vinegar, a drizzle of flax oil, a tsp of honey and two spoon fulls of tahini and mix. Throw the dressing over the pasta salad and combine! This recipe makes 2-3 servings.
